CAN's research encompasses four distinct,
but overlapping, areas of focus.
Foods contain components that have the capacity to modulate one or more metabolic processes in the body and may promote better health. While plant foods such as whole grains, fruits and vegetables are most-often recognized as bioactive, sources include both plants and animals. We identify and investigate the bioactive properties contained in these foods.
Changes in food intake can alter both brain chemistry and the functioning of nerves in the brain. Our research seeks to understand the mechanisms through which these activities occur.
Research has identified various reasons why people eat what they eat. Our research is dedicated to advancing the understanding of human eating behavior and its associated biological, psychological, and social processes.
Are we destined to experience and pass on to future generations the health problems of our ancestors? Or can we alter the future through nutrition? Our research indicates we have more power than once believed.
